Pumpkin bars.

The pumpkin bars that I took to our block party were a huge hit. One neighbor sought me out and told me that he loves anything pumpkin but that these may have been the best pumpkin something he'd ever had!

Here is the recipe:

Pumpkin Bars

2 c. flour
2 c. sugar
1 T cinnamon
2 t baking powder
1 t baking soda
1 t salt
½ t ground nutmeg
½ t ground cloves
1 15-oz. can pumpkin
4 eggs
¾ c. vegetable oil

Sift together dry ingredients. Stir in pumpkin, eggs and oil. Spread batter in greased 15½ x 10½ x 1" baking sheet. Bake at 350ยบ for 25 minutes. Cool in pan on rack before frosting.

Frosting:
6 oz. cream cheese, room temperature
1 c. powdered sugar
5 T butter, room temperature

Beat cream cheese, powdered sugar and butter together until smooth. Spread frosting over cooled cake in a thin layer. Refrigerate until cold then cut into bars (can be cut at room temperature, but it is messier).

Note: These are called pumpkin bars but as you can see from the picture, they're more like pumpkin cake.

oh, yummmm...I am so glad you posted the recipe. I love anything pumpkin. I plan to make pumpkin mushroom soup soon.

Now that's sensible, using canned pumpkin. Getting it out of a fresh one is nigh on impossible!
